Chickpea Vegan Sandwich:  

Requirements

4 to 6 slices of brown bread

1 cup boiled Chana(Chickpea)

Chili powder & garam masala (optional / to taste)

Rock Salt

Lemon juice (1 whole lemon)

Grated carrot

Onion rings

Grated cabbage

Coriander leaves

 

Method

Step 1: Put the chana in a bowl and add the red chili powder, garam masala, salt and lemon juice and blend it well.

Step 2: Toast the bread slice till it surface turns crispy and spread the chana mix.

Step 3: Now sprinkle the grated carrot, cabbage, onion rings, and coriander leaves in layers and cover the bread with another toasted slice and serve the sandwich with choice of sauce- mint, tamarind or tomato

  

Kathi Roll (Vegan & Gluten Free)

Ingredients

200 gms of brown rice flour to make large sized chapattis for the roll.

2 tablespoons of coconut oil.

1 medium size finely chopped onion

1 medium size finely chopped green capsicum

2  medium size tomato finely chopped

1 teaspoon Turmeric powder

2 teaspoon Ginger-garlic paste

Tomato puree 2-3 tablespoons

1 cup of TOFU and mash it well.

1 tablespoon rock salt 

Red chilli powder1/2 teaspoon

Garam masala powder1/4 teaspoon

 

Method

Step 1: Heat coconut oil in a non-stick pan. Add the chopped onion and stir well on medium heat.

Step 2: After 1 minute of stirring the onion add the chopped tomatoes, turmeric powder, and ginger-garlic paste. Mix well and sauté for 2-3 minutes. Add tomato puree. Mix well and cook on high heat for a minute.

Step 3: Add capsicum, mashed tofu, salt, red chilli powder and garam masala powder. Mix well and cook till done.

Step 4: Spread the mix evenly on the chappati and make a roll.
