Rajma (Kidney Beans) chikatra means red sprinkles in its skin, cultivated in highrises of, Uttrakhand very high in fiber, subtle in taste cooked with spice that make its taste very relishable.
Uttarakhand is home to more than hundred varieties of Kidney beans or Rajmah and is extensively grown across the state as a cash crop by marginal farmers. It can be eaten as boiled, baked or as Dal. The whole grain is soaked then fried or boiled to make Dal. It is grown at an altitude between 1000 to 2000m above sea level. This variety is red in color and has spots all over the skin and that is why it is called Chikatra. Cultivated at a realtivly lower altitudes of Himalayas in Uttrakhand, this has a very good flavor and taste. This is also red in color and hence gives a very nice color to the preperation. This needs to be soaked over night (8-10 Hours) before the preperation.
